I recently completed Le Cordon Bleu's 'Discover Chocolate' course at the world-famous picturesque culinary school in Bloomsbury. I learnt all about chocolate in a thrilling after-work chocolate truffles and bonbons demonstration, under the guidance of a Master Pâtissier. I discovered the origins of chocolate: how it is grown, the harvesting ritual and the process that turns this humble fruit into chocolate bars we all love.
By the end of this interactive chocolate demonstration, I had explored and grasped the technique of tempering chocolate and was feeling ready to wow my future guests as the chocolatier hostess with the mostest! I witnessed delicious ganache being prepared and applied using hand rolling, moulding and piping techniques. Following this was a variety of professional decorative mediums and finishing ideas, including chocolate painting and freeze spraying (my favourite technique discovered, freeze spray is used to create excellent chocolate structures).

Highlights of the course included chocolate tasting (passionfruit and raspberry blended chocolates gave us shivers of endorphins!) and learning how to create the perfect ganache.
The chocolatier leading the demonstration was incredibly knowledgable and able to answer even the most difficult and technical of cocoa-related questions. Students are provided with a plastic container so that they can take delicious handmade chocolates home to share with friends and family. This course is perfect for those looking to switch off from the hustle and bustle of London life and to be fully immersed in the ultimate 'Chocolat' moment.
