10 QUESTIONS WITH WILL BEATTY, THE NEW BAR MANAGER AT THE IVY SOHO BRASSERIE
1.) Welcome to The London Musings! How long have you been bar tending for?
Thanks for having me! I have been bar tending for ten years now, and still love every moment of it.
2.) What brought you to The Ivy Soho Brasserie?
I went to The Ivy Soho Brasserie for a drink one night and it was love at first sight…I just knew I needed to work there.
3.) The Ivy Collection are known for innovative menus and fun, themed cocktails. Is there anything exciting on the drink’s menu for 2019?
Yes, as we are in the heart of Soho, where musical legends are made and timeless anthems are produced, we decided to launch a musical inspired cocktail menu, which pays homage to Soho’s history of music. It’s available now and includes some really fun cocktails such as the ‘Ziggy’s Stardust’ featuring Ketel One Citroen, Pierre Ferrand dry curacao, vanilla syrup and lemon juice, garnished with gold glitter.
4.) Gin has been massively popular for the past couple of years. Do you think any other spirits will be noticeably popular in 2019?
A: I believe that gin will still retain dominance in the spirits business for some time to come. However, I would expect to look out for more start-up distilleries and interesting gin combinations.
5.) With spring (hopefully) coming soon, what will you be recommending to those looking for a post-winter pick-me-up?
Our Satisfaction cocktail. It’s my favourite on the list; Sloe gin, Maraschino, hibiscus and Jagger’s iconic lips…delicious!
6.) Is there anything nice on the menu for non-drinkers?
Of course, we do a wide range of non-alcoholic cocktails, juices and smoothies. I really like our Seedlip spiced sour.
7.) What is the wine selection like at The Ivy Soho Brasserie?
It’s a good mix of old and new, world producers with inclusive price ranges. We try to focus on working with quality producers, of which I have great relationships with. My favourite wine on the list has to be our Valpolicella Amarone (great with the sirloin steak).
8.) What makes The Ivy Soho Brasserie a great spot for a drink or two?
We are in the heart of Soho. We have an amazing circular central bar that is always busy and bustling, the ambiance at night is perfect for a relaxing drink. We have a great team here and I think that our guests love our chemistry and passion for what we do.
9.) On a well-deserved day off, what’s your tipple of choice?
Good old cuppa, you can never get the working-class Londoner out of me.
10.) When you’re not busy working, where can you be found in London?
I have been with my partner for six years now. I love nothing more than lazing on the sofa with her and our big brown cat Mocha.
